Are you a fan of vegan food? - Try this spring vegetable soup!


One of my favorite soups! It's easy to prepare, the ingredients can be found in every supermarket no matter there you are. If you are in a hurry, it's no problem at all. It will take you only 15 minutes to prepare this healthy, vegan, and super-delicious spring soup!

Pour some cold water into a cooking pan, bring it to a boil, add a pinch of salt and a laurel leaf. Peel two potatoes and cut them into tiny pieces. Let the potatoes cook for 5 minutes before adding the frozen mirepoix (time-saving) or fresh vegetables, such as carrots, onions, celery, Brussels sprout, string beans and any other vegetables you prefer. Cook for another 10 to 15 minutes and it's ready to be served.
