Chocolate Cupcakes - Chocolicious!

Hello everybody! Since I wrote about cupcakes for the food magazine I thought that it would be nice if I show you how to make some on your own. Therefore I baked the dough yesterday and mixed the cream for the topping today. Read on to find out more about the recipe. This recipe is for 20 cupcakes.


Ingredients:
Ingredients for the mixture
·         Mixture:
o   1 packet of baking powder
o   4 eggs
o   1 tablespoon of cocoa powder
o   130 ml of oil
o   170 g of icing sugar
o   130 ml of lukewarm water
o   270 g of wheat flour
o   1 ½ grated lemon peel

  
·         Cream:
o   75 g butter
o   180 g whipping cream
o   120g cooking chocolate
o   50 g of icing sugar

o   125 g quark (20% grease)
o   250 g mascarpone
o   As much extra icing sugar as you like ;)

At first mix the flour and the baking powder in a bowl. Mix the eggs in another dish until they get quite frothy. Slowly add the water and oil to the eggs. Then carefully trickle the flour to the mass. Now add the cocoa powder, the grated lemon peel and 170 g of the icing sugar. Afterwards mix the batter with a hand mixer on the lowest speed.

Line a 12 bun muffin tin with muffin cases and carefully pour the batter into the hollows. Fill the mixture into the paper cases until they are half full. Now bake it at a temperature of 180°C (upper and bottom heat) in a preheated oven. Bake it about 40 minutes, and then let them cool down.



While the cupcakes are baking you can start with the cream for the topping. Melt the butter in a pot at low temperature. Then add the chocolate and also wait until it melts. Let it cool down by putting the pot into the sink filled with cold water. Now whip the cream until it gets stiff and add the cooled down chocolate with the butter and 50 g of icing sugar to the cream and mix it well. Place the mass in the refrigerator until the muffins are ready and cooled down.

Now mix the quark, the mascarpone and the icing sugar with a hand mixer, but only for about 5 seconds. Add the mass from the refrigerator and mix it until the consistency becomes smooth and thick. Fill it into a piping bag and top your muffins with it. At last, just decorate your cupcakes as you wish. Voilà!

Hello, everyone!

Hey there! 
Before I start to publish several blog posts about my interests and about what is going on in my life, I would like to introduce myself. My name is Jasna and I am 20 years old. I am sure that the most of you haven’t heard about this name before. It is a Slovenian name and it fits for me, since I grew up bilingual in Carinthia in Ludmannsdorf/Bilčovs. At home we are speaking Slovene but most of our surrounding is German-speaking. That means the majority of the people in Carinthia speak German, the TV is mostly German, the documents are mostly German and so on. But the Slovene language isn’t dying out yet, because we are all eager to keep our mother tongue alive. At least my family and friends, because unfortunately there are some people who aren’t that open-minded and strongly decline the Slovene language.
Back to my name. When I meet other people who don’t know the name “Jasna” they almost always understand it wrong. Sometimes this can be annoying, but mostly I take it with humor :) Once the dialogue at a party sounded like that: “What’s your name?”, “Jasna.”, “Jasma?”, “No, with an ‘N’”, “What, Jasman?” :D You see? That kind of situation is always very amusing. Anyway, I like my name and wouldn’t change it.
To tell you something else about me, my hobbies are:
  • learning languages (mostly English, German and Slovene. In the past I also learned Italian for five years and Russian for two years.)
  • drawing (I draw to forget the troubles of everyday life and to bring my visions to paper. Usually I continue drawing until I am satisfied with the result.)
  • travelling (Up to now I was already in Berlin, Hamburg, Rome, Brighton, London, Barcelona, Bratislava, Budapest, Macedonia, Croatia and several other places in Austria, Slovenia and Italy. I am already looking forward to fly to a different continent as soon as possible.)
  • reading (The next English book I would like to read is ‘Gone Girl’ from Gillian Flynn. My expectations of this book are really high and afterwards I will also watch the movie. Of course in English and maybe I will also post a blog about it. ;))
  • sports (jogging, roller skating, Hip Hop)
  • doing handicrafts
  • watching movies and series
  • and of course, relaxing
